Healthy lunch alternative
At restaurant Lingon we always have a wholesome, nutritious, less-caloric lunch alternative on the lunch menu. The dish is put together to balance the three macronutrients well: carbohydrates, fats and proteins.
The dish contains slow, complex carbohydrates that are high in fibres, and mostly whole-grains. These whole-grain foods are great sources of essential minerals and vitamins and are far better than the “white” simple carbohydrates that have been linked to certain health problems. This is also in line with current GI diet methods. Likewise, we also refrain from sweetening the food unless it is absolutely necessary to bring out additional flavours, and even then we only use a small amount of honey or sugar.
We use Swedish cold-pressed organic rapeseed oil in our cooking, which has a good composition of fatty acids. The amounts of fats in the dish are also limited to prevent a high caloric content.
We have also decided to only rarely use ingredients that have a high energy density and unhealthy fatty acids, for example cream, crème fraiche and butter. Instead, we use more vegetables, broths, and lean dairy products in our cooking.
The whole dish's energy density is always calculated and never exceeds 500 calories. The total amount of calories depends of course on what you chose to eat and drink with it.
